Shrimp is delicious no matter how it is prepared, but there is something so wonderful about shrimp grilled up on the barbeque! This cilantro and lime marinade is the perfect pairing for tender shrimp, tomatoes and mushrooms. Grill up your favorite veggies as a side, and this is a perfect, healthy meal!
- ¼ cup of Lime Juice
- 2 tbsp. Fresh Cilantro
- 2 cloves of Garlic
- ¼ tsp. Black Pepper
- 2 tsp. Olive Oil
- 16 Shrimp
- 12 Cherry Tomatoes
- 12 Small Mushrooms
- Kebab skewers
Juice lime and pour ¼ cup of lime juice into small bowl.
Mince garlic and cilantro and add to lime juice. Then add pepper and olive oil. Whisk to combine.
Add marinade to gallon Ziploc bag. Add shrimp and refrigerate for 10-15 minutes.
Alternate shrimp, tomatoes and mushrooms on 4 skewers.
Heat grill to medium-high. Once hot, grill kebabs for 6-7 minutes.
Serve with grilled zucchini, squash and peppers.
